KADDON PIKA

 PRINT RECIPE

PRINT RECIPE - 10 lbs. wings (not in Remember Guam)

Kaddon pika is pronounced kaw-dun pee-ka. It is the spicy, coconut milk-enriched version of estufao -- estufao is chicken cooked in soy sauce and vinegar. The donni', or hot pepper, is what makes this stew pika, or spicy.

In the Chamorro language, we use the word kado in reference to a source of protein -- for example meat, chicken, seafood -- that is cooked in a good amount of liquid. It can be of a soup consistency or of a stew consistency.
