...I mean, wow, creamy delicious pistachio cake.

PISTACHIO CAKE

Pistachio cake, along with velvet and carrot cake, are popular at Chamorro parties. Way back when, pistachio cake was baked in a rectangular pan and served on a foil-covered Pepsi or Bud cardboard case. I've only gotten around to making cupcakes. Normally, it's not an issue to bake the batter in a cake pan, however because this recipe uses a whole cup of pistachio paste, the batter might deflate at the center of a large pan. I'll try it in a 9 x 13 pan at some point.

This pistachio cake recipe is incredibly delicious with sliced of strawberry. Try it too with a very thin coat of chocolate frosting.
